Cornbread taste test

Today is a pretty full day for work, so had a short amount of time to bake/prep today.

We love two types of stuffing for Thanksgiving:  a traditional bread stuffing and a cornbread stuffing, usually with some sausage and Cajun spices.

And although I typically have used Marie Callender’s great cornbread mix, it’s a prepared mix, so I started hunting for a homemade recipe.  In Portland there’s a Grand Central Bakery, which has great creations, and recently published a cookbook.

I had to make sure it tasted okay.

I’ve tried several recipes out of it so far, with solid success.  They have an apple cream cheese Bundt cake which is to die for!  So it was the natural choice for a cornbread recipe.

I baked it in a cast-iron skillet, and it turned out quite good.  It’s has more of a grainy texture than the Marie Callender’s mix, but that might actually work really well in stuffing.

And of course I had to have a bit of cranberries to go with my taste test.  Yum!
